Hi All, I am thinking of buying a smoker (mainly for sea fish) and thought this would be a good place to come for advice. Any tips on smoking fish , the things to watch out for etc would be appreciated. I know they smoke some funny stuff over here and am ready for the stick

if you are hot smoking, i use a kettle barbeque with a small amount of charcoal covered in wood chips then put the lid on, check the fish at regular intervals, it wont take long. Bob appetit Bob C
